Regardless of using a cast iron kettle (tetsubin) or normal stainless steel kettle to boil water, the taste is not the same if we change the heating method. I think only few people know this fact since we hardly have a chance to compare the taste of water boiled with different heating devices.<\/p>\n<p><a href=\"https:\/\/hojotea.com\/jp\/wp-content\/uploads\/IMG_3066.jpg\" rel=\"attachment wp-att-5271\"><img loading=\"lazy\" class=\"alignnone size-full wp-image-5271\" src=\"https:\/\/hojotea.com\/jp\/wp-content\/uploads\/IMG_3066.jpg\" alt=\"IMG_3066\" width=\"630\" height=\"420\" \/><\/a><\/p>\n<h2>IH reduces body<\/h2>\n<p>If the Induction Heater is used, the water from cast iron kettle or stainless steel kettle has very light body, although it has quite strong aftertaste. The flavor of tea becomes slim and less complex. I guess it is due to an electromagnetic wave. I observe the same trend in taste if we heat water or \u00a0in microwave. If you like rich and bold body in taste, and widely spreading flavor, you may want to avoid using an Induction Heater.<\/p>\n<p><img loading=\"lazy\" class=\"alignnone size-full wp-image-5270\" src=\"https:\/\/hojotea.com\/jp\/wp-content\/uploads\/IMG_3067.jpg\" alt=\"IMG_3067\" width=\"630\" height=\"420\" \/><\/p>\n<h2>Please look into the heating method<\/h2>\n<p>Likewise, the taste of water (and subsequently the taste of tea) heated by gas stove, wood stove or electric heater is completely different, eventhough you are using the same kettle. If you are very particular about the taste, you may look into the heating method. I personally using electric heater. In term of taste, this is not the best choice. However, it gives reasonably acceptable taste. I would say it is a safe choice. I have set up an Induction Heater in my office for boiling water.
